1 Tbsp olive oil
1 pound grass-fed ground beef
2 medium yellow onions, chopped
2 red bell peppers, chopped
4 Tbsp minced garlic
1 12-oz can whole peeled tomatoes
1 12-oz can fire-roasted diced tomatoes
2 tsp ground cumin
2 tsp chili powder
1/2 tsp ground cinnamon
1 cup vegetable or beef stock
salt and pepper to taste
1/2 cup fresh cilantro for garnish
1. Heat olive oil in pan on medium-high heat.
2. Saute onions and bell peppers for approximately 5 minutes. Remove from pan and add to crock pot.
3. Add ground beef to same pan (add more olive oil if necessary), season with salt and pepper, and cook until browned. Remove from pan and add to crock pot.
4. Add remaining ingredients to crockpot (except cilantro) and cook on low for approximately 2 1/2 hours.
Serve with avocado cream for a dairy-free alternative.
