1/4 cup cauliflower rice
large handful fresh spinach, chopped
3 baby bella mushrooms, small chop
1 green onion, thinly sliced
1 Tbsp olive oil
sea salt and pepper to taste
1. Add olive oil to pan on medium-high heat.
2. Add mushrooms and cauliflower rice to pan, stir occasionally. Cook for approximately 4 minutes.
3. Add spinach and onion to pan, continue cooking and stirring until spinach wilts, approximately 2 minutes.
4. Turn heat to medium, crack egg over veggies, season with salt and pepper, and stir together until egg cooks, approximately 2 minutes.
