2 cups cooked chicken, shredded/chunked (can use canned)
1/2 super ripe avocado, mashed
1/2 tsp lemon juice
1 tsp dried tarragon (2-3 tsp if using fresh)
1/2 small red onion, minced
1 celery stalk, small diced
1 tsp dill relish
3-5 twists each of salt and pepper (to taste)
Blend together mashed avocado with lemon juice - should be very creamy.
Toss together remaining ingredients with avocado/lemon juice mixture.
Serve atop mixed greens with fresh veggies or in Romaine leaves with avocado slices and thinly sliced red onion and radishes.
