Pumpkin Pie Chicory Latte

If you prefer, you can use fresh brewed coffee (1 cup per recipe) or espresso (1/2 cup per recipe). Milk or almond milk may also be substituted for the coconut milk, if you're concerned about calories.

Ingredients

1 Tablespoon ground chicory root

1 1/2 cups water

1 teaspoon vanilla extract

4 Tablespoons pumpkin puree

4 dashes ground cinnamon

2 dashes ground ginger

2 dashes ground nutmeg

1 dash ground cloves

1 cup unsweetened coconut milk

1 tsp pure maple syrup (optional)

Directions

1. Brew the chicory tea by steeping 1 Tablespoon of ground chicory in 1 1/2 cups of boiling water for 10 minutes

2. Warm up the coconut milk (hot to the touch - but not boiling)

3. Place all ingredients in a blender and blend on high for 30 seconds

4. Top with added cinnamon if desired
